See Kai Run is a Seattle brand making shoes just for children, from first walker sizes up to youth 3Y, with sneakers, boots, sandals and dress shoes for boys and girls. I'd describe them as roomy and flexible rather than strictly minimal, with wide toe boxes, flexible soles and easy velcro fastenings. They also do an adaptive range and replacement insoles.
